Here's what I had for dinner tonight as I had a locally grown cauliflower my first courgette and tomatoes from my garden with mushrooms and onions, which I baked with buckwheat pasta and red lentils.
The sauce is just a roux where I cooked the onion tomato courgette and chilli's in a little olive oil then add some gram flour to thicken and then added a tin of coconut milk so this is gluten free and vegan.
I enjoy hot spicy food on a hot day sometimes and I've been outside while it was baking in the oven with some bread.

I also enjoy hot spicy food in hot weather, and had a scrumptious shakshuka brunch today, full of heat and flavour, whilst enjoying the sunshine. An all too brief reprieve from my desk. Bliss.

I had leftover black beans from dinner a few nights ago for lunch mixed into a burrito and corn tortillas along with a Greek yogurt on the side (Mango flavored). Really good!
Saturday morning out for a walk , back through the local community market. Stopped to buy some very impressive strawberries. Cauliflowers two for Β£1,50. OK . I said . 2 gigantic cauliflowers went in the bag.
Arrived back home with a backpack full of Cauliflower. My wife was not totally impressed 'Congratulations , What am I supposed to do this lot ' . Out came the food chopper, more than a few quick blasts, Hey presto. Cauliflower rice.
So. An experiment - straight into the freezer and leave until req'd.
A few days later ,out it came to defrost, then into a small amount of olive oil, 6 minutes, onto the plate, add the vegetable curry.
