Here's what I made for dinner tonight I had some local organic carrots cauliflower and onions so I gently cooked the onion in a little olive oil to soften it then added crunchy peanut butter coconut milk with curry spices, coated with golden linseeds and pumpkin seeds to give it some extra crunch and nutrition and I had a baked potato with it as the oven was on,
Some satay sauces use honey but I didn't add any sweeteners keeping it plant based and gluten free, it was a perfect meal on a rainy day like today.
That looks lovely Jerry, I havenβt used coconut milk yet itβs one of those things Iβve been meaning to try, Iβm inspired to try this as I love cauliflower π
