Baked cauliflower carrot and black chickpeas in satay sauce. πŸ₯˜

Hi everyone,

Here's what I made for dinner tonight I had some local organic carrots cauliflower and onions so I gently cooked the onion in a little olive oil to soften it then added crunchy peanut butter coconut milk with curry spices, coated with golden linseeds and pumpkin seeds to give it some extra crunch and nutrition and I had a baked potato with it as the oven was on,

Some satay sauces use honey but I didn't add any sweeteners keeping it plant based and gluten free, it was a perfect meal on a rainy day like today.

That looks lovely Jerry, I haven’t used coconut milk yet it’s one of those things I’ve been meaning to try, I’m inspired to try this as I love cauliflower πŸ˜€

Looks so great love organic veggie's and coconut milk. I've never tasted linseeds what type of similar flavor do they have? I often use pumpkin seeds.

Thanks cherv linseeds have a gentle nutty flavour and add flavour colour and nutrition, so well worth adding to many dishes. 😊
