BUDGET BREAKFASTS SOMETHING DIFFERENT

Hello every one good morning to you.

I just thought to share more breakfasts these are something different.

Not toast or cereal but using the cuisines cultures of the World adapted them to my own taste.

I have to admit this came about because of the UK stance on keep evaluating disabled mentally ill people of our community.

Whom I am one, means some times for benefits have no money the constant pressures and stresses feel for all my brothers and sisters.

It still continued and some years had so much stress so had to come up with ideas roll out simple meals.

Am middle Fifties and been using these recipes since been ill. So please adapt change and make it your own.

All have one purpose cheap save money means can eat and do not wish to be embarrassed to go to food banks.

Never have and never will.

Hope you all enjoy.

CHICKPEA CURRY

Tin of Chickpeas

Curry Powder mild one heaped tablespoon.

Onions any frozen or fresh.

Tin Coconut Milk.

Frozen Spinach.

Potatoes use a tin drained.

METHOD

Blender add tin Coconut Milk add Curry Powder blitz.

Pan sauce portion, drained Tin Chickpeas, Potatoes drained.

Microwave Spinach drain add to Curry simmer slowly.

Takes a round ten minutes.

The rest of the Curry sauce useful fridge stand by for any further meals.

Add stock cube or add Peppers diced or any veggies blender.

Could have added Meat but this means good start veggies morning.

Filling cheap.

CHICKEN NOODLE SOUP

Need ready cooked Chicken Thighs or those packs flavoured with Chinese Spice.

Dice shred.

Blender Tin tomatoes Peppers any dice slice frozen be fine Chinese Five Spice one teaspoon.

Or buy shredded Ginger Chilli Jar add those plus Garlic Jar or use tubes puree Garlic, Ginger, Chilli.

Pack to Wok Noodles already cooked vacuumed packed or supermarket ready cooked. In packs.

METHOD

Add portion sauce add Noodles and Chicken warm through gently.

Ten minutes be fine or adjust.

Replace Chicken Prawns Cooked defrosted or use Veggies Noodle bowls.

Use vacuumed packs Microwave Rice option add to microwave then add to saucepan.

These last ones are Mezze type breakfasts something I do most days during the hot weather Summer.

Boiled Eggs, use buy microwave eggs cup add eggs and ping ping 30 seconds adjust.

Muffins, Crumpets, spread with Italian Jams and Preserves best ever on line supermarkets .

Usually Lemon Marmalade or Apricot Jam.

Bowl of Berries Yoghurt Greek with Honey, sometimes Cinnamon.

Hot water or a glass of milk.

Other ones do .

Are vegetable dishes in small portions.

With eggs spices herbs and tomato based, gets rid of fridge veggies if going off.

Small Frittata .

Shakshuka which is a Pepper Tomato dish North Africa .

FRITTATA.

Four eggs beaten bowl.

Season add any veggies you wish or cheat.

Buy antipasti jars drained Peppers Sundried Tomatoes snipped into bowl.

Cheese use grated mozzerralla .

Handful stir in.

Add to a small fry pan searing hot oil and let it cook few minutes turn down, simmer.

Seals Frittata let it set slightly under grill or oven if you have a oven proof pan.

Done this gratin dish.

Used good quality Sausages cooked first Chipolatas .

Diced in layer up.

Portion Omelette mix then Sausages and so on. Top cheese any melting. Strata my version, please remember you need to oil gratin dish.

When warm sliced up.

Both recipes.

Oven temp Strata 200 fan for ten minutes adjust timings.

SHAKSHUKA

Need Passata. Spices Paprika, Cumin, Coriander, Cinnamon half teaspoon each.

Can add Moroccan Spice blends.

Use Chilli if you wish to.

Tomato puree, tomato ketchup touch each.

Peppers any Sundried Tomatoes diced, use antipasti jars of both oven roasted saves time.

Onions any frozen fresh.

Four Eggs.

Herbs used saves times Italian mix.

Please can just say this is my version many types of this recipe.

Some have different veggies spices chilli, so on.

All around Med loads of these combos , Peppers and Tomatoes.

METHOD

Blender Passata, Herbs.

Onions, Spices. Tomato puree, tomato ketchup.

To fry pan add Sauce portion add Peppers Sundried Tomatoes. Snip in allow to simmer crack four eggs in to sauce, under grill for a few minutes. Just sets eggs slightly.

Not rock hard careful now lol...

Add to bowls with crusty bread.
