Home made tomato soup with gluten free brown bread.

Hi everyone,

It must be that time of year with tomato soup being popular. I made this with vine tomatoes cooked in a little olive oil with diced Spanish onion and left to soften then I blended and sieved it before adding a tin of coconut milk some black pepper a little chilli pepper coriander and it was ready just after the bread came out of the oven so I had some warm with it.

So it was good timing and I did enjoy it. Enjoy the rest of your day now folks. 😊

Sounds/looks lovely and so nice with warm bread :). I really need to get round to making some bread to get the flour used up 😬

I enjoyed Baxter's chicken broth soup for tonight's dinner.

That’s a really nice dinner catgirl. 😊

They both look delicious Jerry, love what you've put in your soup. Bet you enjoyed every mouthful and how fortuitous that the bread was ready just the right time.πŸ˜‹

It's got to be the day for soup as I had my cream of carrot and parsnip soup with sourdough bread. I did add peanut butter as well, it has to be done.

Enjoy the rest of your evening.

Thanks Alicia at least we have plenty of rain which keeps the countryside lush.I think that it is soup weather and your cream of carrot and parsnip soup with your home made sourdough sounds perfect.

Enjoy your day now. πŸŒˆπŸƒβ€β™€οΈπŸ˜Š

Oh we certainly have had plenty of rain, my boots told me that when I was slipping and sliding in the mud yesterday LOL, I won't be back on the coastal path for a while as it really was bad, almost impassable.

You honestly can't beat a good homemade soup with bread.

Hope you've had a good day so far and enjoy the rest of it.]

Wow parsnips in soup- I’d never thought to. Could I boil with the carrots then blend?

in reply to Catatvet05

Oh yes you certainly can. I've posted a recipe before, one that I use all the time, it's delicious. I'll try and find it as it's not a link on the internet it's in my recipe bookπŸ˜‹

I made soup - carrots and parsnips! Added lots of ginger - abit too spicy but good. Still something is missing though πŸ˜†

in reply to Catatvet05

The soup I make has cayenne in it.

Sorry for the delay, here is the recipe. It's also a low fodmap recipe which means it's very good if you have IBS.

Cream of Carrot and Parsnip Soup

680g mixed carrots and parsnips, peeled and cut into 2 inch pieces (I cut mine up smaller so they’d cook more quickly)

3 Β½ cups of water or Vegetable stock (I used my homemade low fodmap stock)

1 large potato, peeled and coarsely chopped

2 tablespoons garlic-infused olive oil

1 Β½ tablespoons light brown sugar or unbleached cane sugar

1 tablespoon peeled and grated fresh ginger or 1 teaspoon ground ginger (I used ground ginger)

1 teaspoon dried thyme, well crushed between your fingers, or dill weed (I didn’t crush the thyme)

Β½ teaspoon sea salt, plus more as needed (I used Pink Himalayan salt)

Β½ teaspoon freshly ground black pepper

ΒΌ teaspoon cayenne (optional) – I didn’t use this

1 cup light coconut milk

Garnishes (choose one, two or all three) – I didn’t use any garnish

8 strips Tempeh Bacon, whole or crumbled

2 tablespoons chopped fresh flat-leaf parsley, lightly packed

2 tablespoons thinly sliced chives or scallion greens

Put the carrots and parsnips in a large soup pot. Add the water, potato, oil, brown sugar, ginger, thyme, salt, pepper and optional cayenne and bring to a boil over medium-high heat. Decrease the heat to medium-low, cover and simmer until the carrots and parsnips are very soft and the potato is tender and starting to fall apart, 50 to 60 minutes. Mine too about 35 to 40 minutes as I’d cut the vegetables into smaller pieces.

Process with an immersion blender (I used a normal liquidiser and it worked very well) until smooth. Alternatively, process in batches in a high-speed blender and return to the soup pot. Stir in the coconut milk (I actually added the coconut milk in with the vegetables in the blender and it worked very well.

Hey thanks GranniB and its good to see you're about. πŸ‘πŸ˜Š

Thanks Jerry... l have been busy cleaning & cooking. We are shut down again with covid19 and l am taking advantage of staying home & being productive. Plus l am guiding my (almost 50 year old) son through some easy recipes. Salads were last week and he made a wonderful creation... using the tips everyone shared with me for Thanksgiving - you guys are great! This week is soup. He used take me out for lunch once a week which was fun but l am enjoying our time in the kitchen even more.

This sounds really good to me GranniB, families enjoying spending time together being creative and enjoying it so it’s a very positive recipe for coping during a pandemic. So well done you and you all stay safe and well now and enjoy baking. πŸ‘πŸ˜Š
