It must be that time of year with tomato soup being popular. I made this with vine tomatoes cooked in a little olive oil with diced Spanish onion and left to soften then I blended and sieved it before adding a tin of coconut milk some black pepper a little chilli pepper coriander and it was ready just after the bread came out of the oven so I had some warm with it.
So it was good timing and I did enjoy it. Enjoy the rest of your day now folks. π

It's got to be the day for soup as I had my cream of carrot and parsnip soup with sourdough bread. I did add peanut butter as well, it has to be done.

Oh we certainly have had plenty of rain, my boots told me that when I was slipping and sliding in the mud yesterday LOL, I won't be back on the coastal path for a while as it really was bad, almost impassable.
You honestly can't beat a good homemade soup with bread.

Oh yes you certainly can. I've posted a recipe before, one that I use all the time, it's delicious. I'll try and find it as it's not a link on the internet it's in my recipe bookπ
2 tablespoons thinly sliced chives or scallion greens
Put the carrots and parsnips in a large soup pot. Add the water, potato, oil, brown sugar, ginger, thyme, salt, pepper and optional cayenne and bring to a boil over medium-high heat. Decrease the heat to medium-low, cover and simmer until the carrots and parsnips are very soft and the potato is tender and starting to fall apart, 50 to 60 minutes. Mine too about 35 to 40 minutes as Iβd cut the vegetables into smaller pieces.
Process with an immersion blender (I used a normal liquidiser and it worked very well) until smooth. Alternatively, process in batches in a high-speed blender and return to the soup pot. Stir in the coconut milk (I actually added the coconut milk in with the vegetables in the blender and it worked very well.

Thanks Jerry... l have been busy cleaning & cooking. We are shut down again with covid19 and l am taking advantage of staying home & being productive. Plus l am guiding my (almost 50 year old) son through some easy recipes. Salads were last week and he made a wonderful creation... using the tips everyone shared with me for Thanksgiving - you guys are great! This week is soup. He used take me out for lunch once a week which was fun but l am enjoying our time in the kitchen even more.
