Winter vegetable ginger and quinoa soup.

Hi everyone,

This is what I had this evening it's a soup made with winter veg quinoa red lentils ginger, I cooked some onion and garlic first to slightly caramelise, while the quinoa and lentils cooked and the veg were in another pan until the were all just cooked then added together and left to cook in some stock made with gram flour bouillon and yeast extract.

Instead of croutons I cooked some diced new potatoes in some olive oil until they were crispy and had them on top and it was a nice simple meal.

This is gluten free plant based and wholesome...😊

This looks great!:-) I had lentil and vegetable soup along with" hummus, dates and gluten free crackers for lunch today. Really good! :-)

Thank you for saying that! I usually have hummus for dinner once a week, but since I will have dinner later than normal today, I thought it would be a good thing to have for lunch this time instead. :-)

Thanks TheGnome1960 I don't weigh foods out I just know how much I want to cook so it's a bit vague.

Frozen winter veg,

Quinoa red lentils,

1 onion clove of garlic dried ginger

I cooked the onion and garlic first to slightly caramelise it, while the quinoa and lentils cooked and the veg were cooking in another pan until the were all just cooked.

For the stock, 1 desert spoon of gram flour in a little cold water mixed to a thick paste then add (the water the veg cooked in) with a tea spoon of low salt bouillon and a little yeast extract.

Instead of croutons I cooked some diced new potatoes in olive oil until they were crispy and had them on top and it was a nice simple meal.

I hope this helps and this made 2 nice portions. 😊

Hello Jerry.

Your soup looks so good .I like all the ingredients , though I've never heard of

gram flour bouillon & yeast extract.

Thank you pollydana yeast extract is another brand of Marmite, low salt Swiss bouillon is for gravies and gram flour is chickpea flour, Garbanzo bean flour and besan.
