Today I find it quite cold in Quebec! Finishing January and entering in Febuary wich is kind of a depressive month for me during our winters. This recepie came back to me as I was dreaming of summer. It's a turkish appetizer that you serve cold with lemons. They are easy to make and soooo tasty and even refreshing!
You'll need
500 ml of water
180g of red lentils
4 Table spoon of tomato paste
100 g of Bulghur wheat (the finest the better)
100 ml of olive or sunflower oil
1 onion chopped finely
1 Table spoon of choped fresh dill (you can put more to taste)
1 table spoon of choped fresh parsley (you can put more to taste)
1 pinch ofchili flakes (or more than one pinch if you like it a little hotter)
2 cloves of garlic (crushed)
1 Tablespoon of salt
The juice of 1 lemon.
1-In a pan, bring the lentils to a boil in the water. Cover ans simmer for 15 minutes until de lentils are cooked but still hold their shapes. Don't cook too much. Turn the heat off and stir in the tomato paste and the bulghur wheat. Cover and let on the side for one hour.
2-In a pan whith some oil, cook half if the chopped onion till it gets translucid. Set aside.
3-In your lentil pan, add all the rest of the ingredients (oinion raw and cooked, garlic, herbs, chili flakes) and blend into a paste. Taste and ajust the seasoning and a the amount of lemon juice you like.
4-With your hand, you can form, ball, patties, football shape bites. The mixture should not be too sticky. (tip: while making the bites, you can moist your and with water, this will give a perfect shape to your bites)
5-Put in the refregirator and use as you like.
You can serve them with a squish of fresh lemon or a sauce that you like. You can place them in a salad leaf with other condiments and make a beautiful wrap.
(Yes you can also freeze them!)
