I bought too many local organic carrots so waste not and all that I decided to be a martyr and have some home made carrot and baby tomato soup with some onion slices in a batter of soy cream and gram flour.
I cooked the carrots added the tomatoes garlic black pepper ginger low salt bouillon with a desert spoon of gram flour mixed to a paste with a little water some ground and leaf coriander and then cooked gently.
The onion slices I cooked in a pan with a little olive oil. This is gluten free plant based and low carb.
I enjoyed it and it is perfect this weather 😊
