With Zest posting her delicious Shortbread here's a cookie I often make which is a cross between an Easter biscuit and a Rich Shortbread as I bake them with butter and free range eggs which replaces the gluten. I make them with ground almonds plain gf flour raisins mixed spice and flaked almonds for the top, the photo shows the texture, I love home baked goodies...π

Hi Alicia, sometimes if I want a photo of food and I haven't got one, I use one of Zest 's...But it's a lovely compliment and is appreciated. π so thanks for that...π

Yes Zest does post some lovely food i.e. the bran and fruit loaf cake. I have to say your bread, wow.π
Wow Hidden - you baking looks absolutely gorgeous! I would love to sample one of those! Have you posted the recipe for those before? I would very much like to have that recipe - if you have it easily to hand.
Here's the recipe: 175G Plain GF flour 75g ground almonds 170g butter 150g brown sugar 2 eggs 100g raisins 1/2 tea spoon mixed spice, flaked almonds to top.
Mix all ingredients I put the raisins in last and then spread into a baking tray top with flaked almonds and bake for approx 35 mins @170C or shape and cook individual ones until cooked through. I sometimes use a muffin tray so its quicker and easier.
Cooking times will vary on depth of the biscuit especially when tray baked so times are variable and obviously you can use whole wheat or spelt flour so have many choices.
Many thanks for this recipe, it looks really great. I have put it in my file - so I can hopefully make it sometime. I like the idea of using the muffin tray to have individual ones. I think I'll try that way.
