Gluten free Shortbread with Gooseberry and almond topping...🌝

Hi everyone,

Well this afternoon I did a bit of baking and made these biscuits and they're a shortbread biscuit base with lightly cooked gooseberries with currants and chia seeds to soften. Then mixed with ground almonds a little water and spread on top of the shortbread and sprinkled with linseed, sesame seeds and my fave flaked almonds and then baked.

I like things like this in the afternoon sometimes and with a cuppa, I made a tray full so will freeze some for another day. Shortbreads are one of my favourites and I add seeds like sesame seeds to the base and sprinkle on top as well to make them more nutritious. 😊

That looks lovely. I want to make shortbread now. You’ve had a busy afternoon! πŸ‘¨β€πŸ³ I love flaked almonds and I had forgotten about them til I saw you post them a few times. You need to open a vegan bakery!

Hi Ali and thanks but a bakery sounds like hard work whereas this is fun...and I get to eat them...which's win win for me...😊

These look fantastic Jerry. I agree with Ali about you opening a vegan bakery - your food all looks so professional and really tasty.
