Well this afternoon I did a bit of baking and made these biscuits and they're a shortbread biscuit base with lightly cooked gooseberries with currants and chia seeds to soften. Then mixed with ground almonds a little water and spread on top of the shortbread and sprinkled with linseed, sesame seeds and my fave flaked almonds and then baked.
I like things like this in the afternoon sometimes and with a cuppa, I made a tray full so will freeze some for another day. Shortbreads are one of my favourites and I add seeds like sesame seeds to the base and sprinkle on top as well to make them more nutritious. 😊
