Here's what I made for tonight and its cooked quinoa and red lentils with sweet peppers garlic and onion cooked in olive oil to soften then add some gram flour added some enough water so that it was dough like, I put it in a baking dish and topped with sliced onion chopped baby tomatoes sweet peppers sesame seeds and pumpkin seeds, then I baked it with a baked potato and had it with some salad.
Chick pea flour is nutritious is a great binder for egg free dairy free gluten baking so with quinoa and lentils makes it all very nutritious.
This would be really nice cold too with a salad or for a picnic as it slices well and with summer coming or thats the rumour...π
I hope you won't mind if I copy it and try to make my own version later this week. I use gram flour quite a lot to make socca and I'm happy to find other uses for it.
I've never had quinoa baked before. I'll have to see if I can find a day when it's not too hot to try it. Going to have a big salad tonight for dinner soon.
