I was in London over the weekend supporting friends and family running the London Marathon. At the end we went to an Italian restaurant that had a couple of vegan options, but these did not appeal since they seemed heavy in nightshade plants. So I ordered 3 side dishes to come together as a main meal. Steamed courgettes, spinach and broccoli. It was an expensive meal in a an upmarket Italian restaurant perhaps at £15. But it was served very nicely looked beautiful and filled my large plate - and my tummy.
And it was so packed with nutrition, as the image from cronometer shows. Sorry for the poor quality image (but that's a HU problem!) Just look at the protein in this meal! Look also at the omega-3 to Omega 6 ratio. The Vitamin profile is outstanding.
The only weak spots are B12, VitD and Iodine. But I am getting plenty of sunshine at the moment and I get my B12 and iodine at home. There is zero cholesterol in this meal.

I'm glad you had a nice weekend, and enjoyed your meal at the Italian Restaurant. I hope your friends and family did well in the London Marathon - a great event. I am impressed that they participated, as running Marathons is an incredible distance.

Simple food, simple prep, simple to replicate at home, & simply packed with nutrients & flavour!! 😋
