Hi everyone. I hope you’re enjoying your evening/morning/night so far.

Tonight, I had gluten free spaghetti, gluten free meatballs, salad with walnuts, organic red apples cut up, fake bacon bits, Italian dressing, tomato sauce and cereal on the side. The entire meal was a little higher than normal with total amount of carbs.(109), but the amount of carbs. was because of the cereal for dessert. Everything was really delicious and there is some leftovers for another dinner very soon.

What did you have for dinner tonight?

Stay safe, happy and healthy!😀👍

Planning on grilled Alaskan wild salmon (butter and mesquite spice rub), potatoes and veg.

You’re welcome!😀👍

I have some leftovers from tonight, but I don’t know when we will have the rest next week or after then.

Left overs are better when "aged" a bit.

Yes. It depends on the items that you cook and/or what ingredients are in the recipe/meal.😀👍

That's true. Sometimes though, when you are lazy or too tired to cook some Leftovers fit the bill. Sometimes there's nothing better than a cold slice of pepperoni, sausage and mushroom pizza straight from the fridge. " Guy Food "..lol

That’s true about leftovers, too. Nothing is bad about leftovers from a pizza night now and then.😀👍🍕

Love the swedish and Greek meatballs.. the ones I make are eaten with salad or on their own hot or cold. I haven't made them in a long time, got a lot of catching up to do..🙂

The Swedish meatballs sound really good. Are they gluten free? 😀👍

I think they probably do have gluten in the ones you can buy frozen, but you can probably find then gluten free recipes on them on YouTube...I used to love them.

Thank you! I will have to check it tomorrow after breakfast and when I get to the computer.😀👍

Good night.😀👍

Hi Leah,

Your dinner sounds so savory and delicious. I love meatballs too, I have vegetarian meatballs (taste the same🤷‍♀️) with spaghetti or sandwich. 😋

You chose walnuts for your salad is a great choice as I find its texture goes so well with the rest. 👍

I’m glad you enjoyed your dinner and thank you for sharing with us always! 😊🙏🌺

You’re welcome, Koko. I’m glad you and everyone else likes my dinner for tonight. It’s nice to find a place that has gluten free meatballs near my house. Not too many stores have them year round.😀👍

The salad was really good, too and I enjoy having organic red apples on the salad when we do pasta nights here.😀👍

It’s wonderful when we have gluten free places to supply for our diet needs. You tell your friends also to show support to these stores and they will bring you more varieties 😁👍 I love red apples with tahjin salt 🤣😅 I can eat them all day but I know I have my limits. 😁

That sounds really yum Leah! Your salad made me feel extra hungry. So tasty! And leftovers too. That's always such a bonus. We had baked fish parcels last night. Fillets of cod wrapped up in greaseproof with a little sliced onion, red and yellow peppers, courgette (zucchini) and a few leftover mushrooms (which were lurking in the veg drawer of the fridge). All seasoned up with some spices and herbs and just quickly baked in my Ninja Foodie, and we had coconut and spinach rice alongside.

That sounds really good, Sue and thank you for letting me know what courgette is. I need to see if we can get some in the next few weeks and add that to a big salad sometime. :-)

Thank you for saying that about the spaghetti and meatballs with the salad. It's one of my favorite gluten free pasta meals that we have almost once a week. If we don't have spaghetti, we have another pasta dish made with another type of gluten free pasta. :-)
