Curry is a great place to start. One of my favs is a curry carrot soup. Light and creamy, but low in saturated fat, I love the curry and sweetness of carrots blended with lite coconut milk.
1 diced onion
4 cups low-sodium veg stock
2 pounds carrots, grated or finely sliced
1 tablespoon minced or grated ginger
1 tablespoon curry powder
1/2 to 1 cup of lite coconut milk
salt to taste
saute the onion in 1/4 cup veg stock. Add all except curry powder & coconut milk, stir, bring to a boil on med high heat. Reduce heat and cook a few minutes until carrots are tender. Here you can either put it in a blender or just add the remaining ingredients and cook on low heat 5-10 minutes to blend the flavors.
In general, to lose weight, make and store several soups and other dishes using a lot of veggies and high fiber and no processed or refined sugar or added oils. Oils like corn oil or cottonseed oil are just liquid fat, very high in calories but take very little space in your tummy, so aren't filling. I keep several big containers of my favorite foods in the fridge. Another fav is pea soup with barley. Vegetarian chili is also great! A variety keeps me happy and high fiber keeps me feeling satisfied.
I've gotten to the point where I no longer count calories and I'm always full and happy. It's the fiber that does it. And once you get used to all the great flavors that are in complex, "real" unprocessed foods like the hundreds of veggies, legumes (beans), nuts, fruit, berries, and even some tubers, you won't want to go back to Twinkies (bleah, disgusting!)
Also, especially stay away from saturated fat as much as you can. Happy weight loss eating!
Thanks that sound yum I will definitely give it a go. I am.trying to eat as much unprocessed foods at the minute but all a bit bland. The curry carrot soup might be a winner ☺
Yep, that's what spices are for.
Give it 2 weeks o eating only unprocessed foods and you'll never go back!

In order to lose weight, one should try to understand why do we gain weight in the first place. It would then become easier to reverse the process in a healthy way. I suggest you should do some amount of research on this.
According to my understanding, high insulin levels circulating in our blood as a result of inappropriate foods is responsible for weight gain. In order to reverse this condition, one should avoid the food which raises insulin levels and eat those foods which keep insulin level low promoting weight loss.
Which foods raise insulin levels high? Answer is GPS.
Grains, Potatoes and Sugar.
If you eliminate the above ( or reduce the amount drastically) in your diet, you will start losing weight. It is that simple. You may have to compensate the shortfall in energy by using healthy fats, if required.
This kind of diet is called LCHF and has been very effective in losing weight. You should learn about this. It is possible to implement this on vegetarian or meat based diet.
