Sounds good, here's one better, For ALL diabetes, make your pancakes, which normally is a BIG NO, NO using Almond or Coconut flour is a better option has less carbs
Buckwheat is really good for a diabetic as it helps lower blood sugar levels, coconut flour is an odd one for baking but I fancy making some with ground almonds and buckwheat flour so its gluten free, as I'm a coeliac and not diabetic. ๐

Thank you for that, also what else that was in that link was a book called (things that your doctor didn't tell you about diabetes). Sounded interesting so I ordered it. Hopefully I'll find useable information. I'm kinda new to diabetes trying to find out whatever information I can.

Hi, when I make pancakes I mix some flour with milk and an egg so its a thick batter and then leave out to stand in the fridge for at least an hour. I don't bother weighing the flour or measuring the milk. I also use goats milk as that's easier to digest than cows milk.
I'm glad the cake turned out OK and I had some warm with custard as well. ๐
