Great article. Everyone should know this stuff. Important point there about the excessive amount of omega-6 oils in the modern diet . . because the government encourages us to eat novel oils like canola and soybean instead of 'bad fats'
As far as I know most margarines now are transesterified rather than hydrogenated; however, since this makes them functionally similar to (say) lard, they're a completely pointless bit of technology.
