I’ve definitely used food as a distraction this afternoon!
I had a phone call from the hospital at 2pm saying they have a cancellation so I’m now going in for my full hysterectomy tomorrow at 7.30am! You can all expect some lovely hospital food shots for the next few days! I am a little bit terrified!
Luckily, I’d had a lovely nutritious breakfast, joined a couple of friends for lunch, I had a lovely leek and potato soup with a peppermint tea. I also made sure I took loads of healthy snacks into work with me, raisins, melon and mango slices, tangerines, apples, cashew nuts and drank loads of water.
I got the call from the hospital at 2pm. I’m really pleased the op is tomorrow as I really want them to cut out whatever they can as quickly as they can but I also feel a bit panicked that it’s so soon!
After I found out I went home and made some really lovely organic pesto. I then made a supergreen smoothie with celery, frozen grapes, kale, broccoli, beet greens, lime juice, cucumber, fresh mint and spirulina.
For dinner I cooked organic chicken in cashew butter, tahini paste, Moroccan amlou and sesame seeds. I cooked mushrooms, chestnuts, onion and garlic in some avocado oil and then added coconut milk to make a creamy, nutty sauce. I cooked whole-wheat fusilli and mixed my home made pesto into this. It wasn’t the most photogenic meal but it was very tasty and given I am unlikely to eat anything now until after the op, I really enjoyed it.
