Here's some really easy ice-cream I made earlier by freezing one banana soaking some cashew nuts in boiling water and leaving to stand. After draining I used a blender to blend the frozen banana with the soft cashew nuts and I added a little cashew cream from my fridge and blended it with a little vanilla essence and then put it in my freezer and this is how it turned out:
I had it with a gooseberry nut crumble, Which is also gluten free, vegan and paleo. And I enjoyed it...π
So pleased I spotted this posting. I've wanted this type of recipe for quite a while. Granddaughter can't tolerate pea protein amongst other allergies, so the commercial dairy free peanut icecream is not possible and I'm thinking cashew nut might be ok. And now thanks to you with your recipe, I will have a go at making it. I've not heard of cashew cream, seen the milk but not the cashew cream. Would I find it in a supermarket or Healthfood shop ? It's puzzled me. Thanks for the lovely photo, very tempting.
Thank you and I made the cashew cream just like the ice cream, in that I soaked some cashew nuts (not salted or roasted) for over 2 hours and then I drained them put them in my blender and just covered with water and blended it into a thick cream and I added some of that to the cashew nuts before I blended them for the ice cream. I have also blended cashews with coconut milk and that works.
