Hi folks,
I made some biscuits with pureed dates and was really pleased, so I looked for some date sugar but they only had coconut sugar. Whats interesting about coconut sugar is it contains inulin which helps probiotics to grow and flourish, so yes its still a sweetener and with calories but its an interesting alternative. I used quinoa flour and plain GF flour with organic butter coconut sugar and free range eggs to help bind the biscuits and shortbread are my favourite biscuits.
