Hi folks, here's some baked peppers I stuffed with red quinoa, chestnut mushrooms baby tomatoes white onion and shredded rainbow chard. I roasted some fennel at the same time and that complimented it really well. I cooked the quinoa and veg cleaned out the peppers and baked for approx 30 mins and then sprinkled with herbs and sesame seeds, which are healthy little seeds.
Fennel is supposed to be good in treating IBS and heartburn,
