Black rice is more nutritious then brown or red rice as it contains anthocyanin and vitamin E and I have been experimenting with it and really like it. I have been making black rice puddings with it and that looks weird as well.
(Anthocyanin is anti inflammatory and is what gives it its colour, dark purple)
I used, chestnut mushrooms, leek, red onion, garlic, chilli, sweet peppers and sliced rainbow chard. I lightly cooked all the veg in a little virgin-olive oil and added turmeric, ginger, coriander and cumin. Then I added 250ml coconut milk and thickened with a little coconut flour but any plain flour will do.
I do think it looks whacky, so here a photo and I hope everyone is keeping well,

Zest, my wife is mediterranean and all they eat is white rice every day. A lot of over weight people. I'm more of a health nut and heard about black rice. Love it! Go for it. It's healthier than all of them.
Hi Zest and thanks, black rice has a really good texture and I've also been making black rice puddings with dried fruit and flaked almonds and was really pleased as I didn't think it needed sweetening.

We have been using this rice for about 3 years now, but mix it with brown and white jasmine rice as we tried to eat it on its own, but did not like it. .. mixing it is much more nicer then the plain, white or brown jasmine rice. Though, that is also very nice.

I'm fed up with all the processed rubbish around. We had a leaflet for a local freezer retailer that came through our door and I would say around 99% of the foods on sale were highly processed.

You are welcome and it looks lovely. Unfortunately I am unable to eat wholegrain at the moment as I had my appointment with the Dietician yesterday and one of the things I should eliminate is wholegrain which is a nuisance. I don't think wholegrain is bothering me but I have to eliminate foods to know. I know for sure that I react to beans so I'll have to look at something else in their place.
I hate processed foods and agree, they are not fit for human consumption but who are we, we are just little people in a big wide world.

Yes you are right and it's going to be hard but it'll be worth it to find out what is irritating my tummy.
That looks really good Hidden , I rarely eat rice except occasionally a little brown basmati, because it makes me feel bloated when I eat it but very quickly hungry again. I think I will give the black rice a try to see if it is better π
Hi ShadowDee, black rice is indeed recommended for diabetics as it has a low sugar level, it is easy to cook however it takes a lot longer to cook and is best when soaked overnight and then simmered for around 45 mins, here's a link about it with cooking hints:
