Shortbread biscuits are traditional at Christmas and I am fond of them any time of the year LOL. It's also nice to have a treat that is sugar free and this is the same recipe I use for sweet shortbread biscuits. I just omit the sugar and add grated cheese and some sesame seeds for a bit of extra crunch and nutritional punch 😊
Here's the recipe:
50g quinoa flour, 30g ground chia seeds, 20g sesame seeds, 50g plain GF flour, 100g grated strong mature cheddar cheese, 75g butter, 1 free range egg, 1/4 tea spoon pink Himalayan sea salt, and loose coriander.
I use a greased muffin tray and sprinkled with black pepper before baking and baked for approx 20 mins at 150C. I made 12 of these and they freeze well.
They are lovely on their own or with cheese and or any salad veg...
