Hello everyone, here's a picture of a slice of apple and cinnamon cake. I was making one as a birthday cake so I made an extra one, for me... I also had a bag of bramley apples given to me and I love bramley's.
I know that cakes use fat and sugar but this shows they need not be all empty calories.
Here's the recipe:
150g Gluten free SR flour (I use Doves farm)
50g ground chia seeds
150g butter
150g brown sugar
3 large free range eggs
3 med bramley apples, diced (peeled and cored)
1 tea spoon cinnamon, (I use Schwartz)
1 tea spoon mixed spice, (I use Schwartz)
mix the sugar and butter in a food processor, then add the other ingredients except the apple chunks and mixed spice then add the apple and mix in gently, spread in greased baking trays sprinkle the mixed spice on top. Bake in a preheated oven for approx 40 mins at 150c or until cooked through.
It is a very moist cake and would make a good pudding with custard when warm...I've just had this slice with a cup of tea.
I'm definitely going to copy and paste your great recipe into my file of 'Tasty Recipes to try' because it looks really good! Beautiful photo, and I think it will be a delicious cake. Thanks for sharing it.
Just wanted to ask whether you've ever tried making a version of your cake omitting the sugar? It's just that I have started to make cakes that don't contain any granulated sugar - I just rely on the sweetness of the fruits that are in the cake recipe, and I would imagine that your recipe might be able to remain tasty without the sugar - I am certainly going to try it out without sugar when I do it - but my taste buds have changed, and I know some people like a sweeter taste.
Hi Zest, I don't like too much sugar and use golden granulated sugar as its less refined/sweet. And I tend to use slightly less than a recipe calls for but slightly less and none is very different. I use less sugar with a carrot cake and a date cake.
I made some shortbread biscuits and forgot the sugar and was disappointed until I had them with cheese. And now I make a butter shortbread with herbs and grated cheese (and no sugar). I also often make a savoury crumble as its much quicker and easier than pastry especially as it has to be gluten free. It's half fat to flour so easy peasy recipe and it reminds me of a savoury suet pudding and because the crumble is thicker than pastry you need more gravy...
So in answer to your question bramley apples are cooking apples, so sour and I eat them a lot but stewed with sultanas, a little sugar and cinnamon. So I'd use eating apples and some dates to try it sugar free and you could always sprinkle icing sugar on it or ice it with icing sugar if it isn't sweet enough. I use golden icing sugar as its less refined.
