Veggie and cheese bake 🧀

Hello folks, here's what I made for tea tonight and its a complete meal as I baked cavolo nero, broccoli, sweet peppers, red onions, garlic with white and sweet potatoes all baked in a cheese sauce.

I have my cheating methods, so when I make cheese sauce I gently fry the onions garlic and peppers in a little olive oil, then when they're translucent I add some butter and as soon as its melted I add some flour and mix thoroughly and it doesn't matter that its mixed up with the onions and then gradually add some milk and this is the secret to add the milk gently stirring all the time and then add the grated cheese and bake.

I have to confess to really liking cavolo since buying some after BadHare said how healthy it is and thought I'm up for some of that...
