Red quinoa and vegetables baked in coconut milk parsley sauce, GF and vegan, πŸ₯₯

Hi folks,

Here's what I made for tonight and we want colourful foods especially this time of year so I used red quinoa, yellow pepper, red onion, garlic, chilli, carrots and cavolo in a sauce made with coconut milk and coconut flour with parsley.

I cooked the veg gently in a little olive oil, while the quinoa boiled merrily away. The sauce I made by adding a little water to some coconut flour stirred to a paste and added coconut milk and chopped parsley and baked. I baked with some baby chestnut mushrooms to have with it.

It was really good and I've plenty left for tomorrow which I really like 😊

yes this does look delicious. Are you vegan. im trying to go vegan I'm a bit unsure of what to eat. is vegan quorn healthy? im only trying to do this because of what I'm reading and hearing about meat and dairy. im doing it slowly, just cutting out real meat first and i only ate eggs and had some milk in my tea which i still have but i will rule out eggs soon as i dont know what to eat and i havent been very well lately. thanks, grace xoxo

Thank you grace111, I'm not a vegan I'm a coeliac and I have to be careful with rich foods and some saturated fats so I drink a little milk in tea and I eat mature cheddar cheese (which's very low in lactose) and I find coconut milk easier to digest. So lots of my meals are not only GF but vegan/paleo.

thanks jerry, sorry to hear of you condition, one good thing is it keeps you looking after yourself and eating well. since i had my gallbladder out and a recontruscted bile duct i'v been doing that and cooking everything from scractch but i now want to give up the meat and the dairy. im feeling a good bit better today i had a great sleep last night and hoping to get out today. love grace xoxo

grace111 Quorn is highly processed, as are many ready made vegan products. It's easy to swap meat for these, but they're not always healthy. Cooking from scratch & avoiding processed foods is best.

Hi grace,

Sorry to hear you've been unwell. Good on you for considering veganism. I think going vegan is one of best things I've done and I'm sure you won't regret it either.

What texture does coconut flour give to a sauce? I've only used it for baking, so may try it. :)

Thanks Mel,

Coconut flour gives a light texture as its very absorbent so you use 1/2 as much compared to other flour's, apart from that you're just using it as a thickener and it works. I also thicken sauces with quinoa flour and coconut milk sometimes.

Hi there and thank you, Cavolo nero is an Italian variety of Kale it is very dark and some people call it black cabbage. 😊
