Gluten Free Vegan Baked Stuffed Paratha with curried lentil soup πŸ”₯🌢

Hi folks, earlier this week I read a really interesting article about Saliha the lady who won Master chef and stating the obvious boy can she cook.

In the article was a recipe for stuffed paratha which's a flat Indian bread and can be made with just plain flour, water and salt, hers used oil and I used coconut milk and this is easy peasy no yeast no fuss, flat bread.

For the Paratha:

100g Gluten free bread flour

50g quinoa flour

125ml coconut milk

1/3 tea spoon sea salt

You can add any spice I just wanted to see what they're like plain.

I made a dough broke it into 4 and rolled 4 balls of dough in my hand flattened them spread with stuffing squeezed the edges together and baked at 150C for approx 20 mins. Traditionally they are fried but I like baked food.

The soup is just blended curry with coconut milk added, I cooked too much curry earlier in the week so this was a really easy meal.

It reminded me off a spicy veggie pasty and the bread is amazing considering how easy it is to make.

Stuffed whole wheat Paratha was my fav until i got detected as a Diabetic

Stuffed with cooked potato.

I would suggest to have it with some indian mango pickle.. if u can get some..

Goes well along with Paratha..

Thank you Shashikantiyengar, in Saliha's article there was a recipe for mango chutney/pickle and I made some of that with this curry, which started off as the stuffing for the paratha but...I made too much.

As for having to avoid some foods since being diagnosed as diabetic, I feel for you as I'm a diagnosed coeliac so I have to avoid many foods.
