Hi folks, earlier this week I read a really interesting article about Saliha the lady who won Master chef and stating the obvious boy can she cook.
In the article was a recipe for stuffed paratha which's a flat Indian bread and can be made with just plain flour, water and salt, hers used oil and I used coconut milk and this is easy peasy no yeast no fuss, flat bread.
For the Paratha:
100g Gluten free bread flour
50g quinoa flour
125ml coconut milk
1/3 tea spoon sea salt
You can add any spice I just wanted to see what they're like plain.
I made a dough broke it into 4 and rolled 4 balls of dough in my hand flattened them spread with stuffing squeezed the edges together and baked at 150C for approx 20 mins. Traditionally they are fried but I like baked food.
The soup is just blended curry with coconut milk added, I cooked too much curry earlier in the week so this was a really easy meal.
It reminded me off a spicy veggie pasty and the bread is amazing considering how easy it is to make.
