Hello everyone, here's a picture of a hot pot that I made using sweet potatoes for the topping.
I started by lightly frying a diced red onion, garlic, red and yellow peppers and mushrooms in olive oil. I then added diced carrots and tomatoes and I seasoned with stock, a little cumin and coriander to make it slightly spicy, sliced sweet potato and some more mushrooms which I layered on top with a little butter and baked until the top was nice and crispy.
This sort of meal is great for the autumn, healthy comfort food...and its what I had for tea tonight.
