I am SO frustrated as I was loving running 3 x 5km / week in November and had Covid (mildly) in December and haven't been able to get back up to my previous fitness levels since. Now we're approaching April, I wonder whether I should give up trying as maybe I'm making a recovery harder? I can make it up to 2km - 2.5km and then I'm shattered for a few days afterwards.

It may be best to step back a level so that you still run but not so hard that you put yourself out of action for the next few days. Once you find you’re recovering quicker, then try building up again. Which sounds rather like suggesting you start the plan again!

I agree with Rainbow I think just aim for a slower speed and just get that 2.5k done without it feeling like it is killing you then build up again from there. There wouldn't probably be much harm either in going back a few weeks in c25k like start from week 4 and build from there. I don't think you are necessarily making your recovery harder I think you are more being hard on yourself than anything!
Take it a notch or two slower and see how that goes for you.
