I am waiting for my Achilles' tendon to finish recovering before I can run again. I last ran on Friday W5 R2. I have been doing some stretch an strengthening exercises.

You won’t have lost any fitness in a week, so you could either redo that same run nice and steadily, or even tackle R3, again super slow. R3 is the 20 minuter, so it might even be ‘easier’ than the intervals of R2.
I had a week off last week for a foot issue, and went out and did a steady 4k with no problem on Monday. 😀
Good luck, and I hope your achilles is ok. Obviously don’t run at all if there’s any doubt.
