I’ve always wanted to try a recipe I have for pickled beet eggs. I’ve made the sweet ones, but not the pickled. But I can’t cook like I used to, so the recipe will have to stay on the back burner for now. 🤭
Hi LadyZen, while in the hospital, I had "Shepherd's Pie" for the first time.
It was delicious, made with beef and not lamb. I want to try that meal one

That reminds me. Many years ago, my first meal after being in the hospital for 3 days was a grill cheese sandwich and tomato soup. It was so good. On my 5th and final day in the hospital, I ordered the same meal to celebrate. It didn't taste so good the 2nd time around. Turns out, the grill cheese and soup wasn't good at all. I had just been starving, so anything would've tasted good. 😁But I make ground beef shepherd’s pie. I've never tried lamb before.

Not many people care for the taste of lamb but the beef was very good.

ever who invented Pineapple on pizza needs tied up so they don`t come up with another crazed idea and fish pizza absolute yuk.
I do have an air fryer, but I rarely use it. But I love all pizza and make different variations at home using tortilla.
I love Mediterranean flavors too, like hummus rice bowls. I don't eat a lot of noodles though.

Sometimes it helps to talk about the things that are bothering us. Sometimes it helps to try to find some joy. It's a balance.
Winters are harder. But it gives me summer to look forward to.
I've recently discovered I'm intolerant to wheat and probably to gluten in general. Bit of a jolt, that one! So I'm very keen to find recipes that mean eating good stuff but without wheat or gluten involved. It's a bit of a challenge. I need to eat lots of protein too, it turns out. Probably not very trendy at the moment, but it's what I need to stay healthy, apparently.
I did find a reasonable GF sliced bread loaf that makes ok toast - and had it with ham, egg and melted cheese on top. Not bad at all On a day when I can't think straight I might have to skip either the egg or the cheese, and keep it simple. But it's a reasonable little dish for most occasions of needing something tasty in a hurry...
I have the same struggles with dairy. I can't eat anything dairy, so I create my own variations of with non-dairy products. I never realized how much dairy is in foods until I couldn't eat it anymore.
I know what you mean! I also can't drink dairy milk anymore, nor tolerate foods with that ingredient particularly well. I found that I can manage some dairy, though - such as hard cheese, butter and cream - reasonably ok. Or at least a small amount of them. Something to do with having less lactose in those items, possibly. It does at least mean I can have cream in coffee if a place can supply that, out and about! I'm not so great at tolerating carbs, in general, so found that 'obvious' swaps are not so simple, necessarily - eg, Oat milk is a problem, maybe a bit to do with the seed oils in many versions of it, too. I find I'm a bit better off with almond milk, or coconut milk (an acquired taste, mind you...).

I tried it! Interesting result. First, the water got active when I stirred it first with a spoon. That woke me up a bit! I liked the ease of putting the egg in, stirring, cling film on and just leave it. I think it could have taken another minute though, as egg broke when I took it out. Luckily I had drained off most of the water already (phew!) Very nice though, atop ham and melted cheese on gluten free toast - and with some asparagus on the side 😀🙏
