I find that I am often pretty angry and on edge due to being so stressed and anxious. Does this happen to anyone else? It's to the point where it severely affects my relationships with people and I need to find ways to learn to cope with my anger in a healthy way.

I know exactly how ur feeling as its same for me😕😢
Yes! When I'm feeling anxious and trying to get home and there's tons of traffic, or if I'm stuck in a line at a store, I find myself getting really irritated. Lately I'm feeling more of just anger at life in general from feeling crappy day after day. I think it's a perfectly normal response (assuming you don't actually act on that anger and punch someone in the face or something!) What I'm trying to do is redirect that anger at my anxiety, and use it as motivation to do what I need to get better. It's almost like anxiety is a bully, so I try to get mad at it and stand up to it.
One thing that can help with driving is deep breaths from your diaphragm that you hold for a second, then slowly release.
You can also squeeze the steering wheel hard and then release. Or squeeze and release any of your muscles that you can while safely driving.
There's a reason you're angry. It could be biochemical, or due to some past experiences, but I urge you to get professional help from a counselor before you destroy relationships that you care about.
Most people do not want to be around an angry person. That's just a fact. The sooner you deal with your anger, the easier it will be and the less damage you will do.
