This is this morning’s late breakfast: keto pancake served with home-made Greek yogurt and raspberries.

The pancake couldn’t be easier: whisk up a large egg, stir in a tbsp of ground almonds. Fry it gently in some butter for about 2 minutes each side.

They’re also good with some grated cheese added to the mixture if you fancy a savoury one.
