The keto garlic & Rosemary focaccia recipe is from DietDoctor.com and was a surprising success. Of course I didn’t just eat an 1/8 of it though! 🤦🏽♀️
6oz mozzarella; 2 tbsp cream cheese; 1 tsp white wine vinegar; 1 egg; 3/4 cup almond flour;1/2 tsp salt; 1/2 tsp garlic powder; 2 oz room temp butter; 3 garlic cloves; 1/2 tsp sea salt; fresh rosemary.
1. Preheat oven to 200c.
2. Melt mozzarella and cream cheese in pan.
3. Add other ingredients altogether in a bowl and stir well.
4. Pour the ‘dough’ (its more like pancake mixture) onto grease proof paper and bake for 12 mins on a baking tray. Cool.
5. Combine butter, garlic, salt & rosemary and spread on top of bread. Bake for another 12 minutes.
The soup I made today had: onions, celery, carrot, Jerusalem artichoke, veg stock and small carton of coconut cream, which was a good complement to the focaccia.
