Weekend Breakfast

Hi,

Like most of you I like a treat or different breakfast at the weekend. This is my go to treat, butchers sausage, grilled, grilled tomatoes, scrambled eggs and mushrooms boiled. I keep the water that the mushrooms have been boiled in and use it to make rice that I then put in stuffed peppers. You can tart it up with some chopped chives on the eggs if I remember to do so.

Enjoy.

Looks like the perfect breakfast. Never tried boiling mushrooms, will have a go! Thanks

Delicious. I have a similar breakfast/brunch at weekends. As I follow LCHF I fry the mushrooms and tomatoes using olive oil or butter. I use mixed herbs on the eggs.

Looks good!

I cook mushrooms in butter in a frying pan, leave them whole and the lovely juices come out in them, then you have to get them into your mouth without losing the juice :o If they're a bit past their prime, I slice them and cook them in butter in a saucepan.

I used to fry them in butter but find it too rich for me now so boiling is my alternative.
