My version of Greek salad

I make this as a quick and easy meal. No cooking is a bonus in this hot weather.

Peppers diced, olives any sort, cucumber sliced, courgettes sliced thinly with potato peeler- you can leave skin on, red onion sliced very thinly or ordinary onion. Tomatoes- whole cherry or sliced, feta cheese crumbled. Drizzle with dressing. Really yummy. Nice with prosciutto as well.

My dressing

Olive oil, one lemon zested and the juice, chilli flakes or fresh chilli diced, heaped teaspoon of whole grain mustard salt and black pepper. Put in a jar and shake to mix. Will keep for a couple of days in the fridge. I generally make it in the sort of jar you get mint sauce or horseradish in, so not that large.

You can also mix it up by omitting ingredients or adding balsamic vinegar, or sherry vinegar. Adjust for personal taste.

Thank you for the tip. I shall try to remember that.

I must confess I find the recipe sections a bit laborious to navigate. I wish you could search say- chicken recipes, fish etc. Perhaps you can but I haven’t found it.
