Like a lot of folk, I seem to be experiencing quite a bit of bother getting onto and staying on the site, so hope this post is going to get through ok.
Slow Cooked Lamb Hotpot. ( Using a slow cooker)
350g sliced lamb neck fillet ( about 24 nice sized slices)
500g carrots, scrubbed, trimmed and quartered.
200g onion, thinly sliced.
2 fat garlic cloves, thinly sliced.
600g peeled weight potatoes, sliced thinly ( I use a mandolin). ( you don't have to peel but I prefer them peeled in this dish).
100g passatta.
1tsp dried thyme.
15g flour ( any).
1/4tsp ground pepper.
1 tsp oil.
1 lamb stock cube.
Put the flour and pepper in a bag, add the lamb and shake. In a big pan heat the oil and add the onion and stir, add the lamb and stir for a couple of minutes ( yes you will find it is sticking to the pan base a little, this is normal, keep stirring). Pour in 100ml hot water and stir to unstick the bits from the pan bottom, add the garlic and stir for a minute. Add 250ml hot water, the passatta, carrots, stock cube and thyme. Stir well then cover and bring the pan to a bubble. Whilst the pan is getting to the bubble, preheat your slow cooker to high, then transfer the pan contents to it. Arrange the thinly sliced potato in layers over the top and press down a little so the liquid spills over the top. Cover with the lid.
Now you have many options, either cook on high for 4 hours, or cook on high for 1 hour then low for about 6 hours. Or put everything in before you go to bed and turn the cooker to low to cook overnight and through the next day until you want to eat it. Whichever method you use, 10 minutes before serving I like to heat the grill and pop the dish under to crisp the top layer of potato. Personal choice though.
This serves 5 at 332kcals a serving. I add 100g steamed caulie, and 100g steamed broccoli to my plate for an extra 58 kcals, making my dinner 390kcals and 4 portions of my '5 a day'.
You could do this in a low oven if you don't have a slow cooker, 160*C for about 6 hours.
So this my Sunday Lunch for today, the smells coming from the kitchen are divine and I can't wait to tuck in later. The kids are having apple and blackberry crumble with custard too adding another portion to their '5 a day'.
