This was my tea tonight (it's in my tummy now, thank goodness, as I was Hank Marvin).
The courgettes were homegrown and as I peeled them with a sharp potato peeler, they came out looking more like fettuccine than spaghetti - hence the name 🤣. I fried them in olive oil with crushed garlic so they didn't go soggy.
The bolognese consists of red pepper, onions, garlic, courgette and quorn mince fried in olive oil. Then I added tinned tomatoes, tomato purée, fresh basil, 1/2 tsp chipotle paste and a veggie stock cube. Cooked it with the lid on for 15 mins then took it off for the last ten minutes. Served with fresh basil from the garden and a sprinkle of Parmesan.

Your courgettucinni look and sound great, gonna try cooking them. Bought myself a spiralizer the other day, it is rubbish - waste of £14!! Rather have spent that on courgettes 😁 Gonna get my trusty old potato peeler out.
I found with the spiraliser, the courgetti went like mush. I've recently bought a cheapo potato peeler from Dunelm and it makes long flat fettuccine type strands which hold their shape far better. Plus it peels spuds! 🤣
