Not a new vegetable but a new way of cooking it. The aubergine which I have fried or roasted and used much olive oil in the process. Tonight I followed a Korean recipe soy sauce and garlic steamed aubergine. Very nice and no fat

Sounds interesting. Do you fancy posting it as a recipe, with picture, if poss?
Not sure how to tag or if I should have done just a reply to Misslovely. The recipe was from Our Korean Kitchen by Jordan Bourke and Regina Pyo. I used it as a side dish. Steam the aubergine that has been cut into chunks.I used two English ones as can’t get Asian ones. Stream for 10 to 15 minutes. Make the sauce 2tbsp soy sauce, 2 garlic cloves crushed, 2 spring onions finely chopped, a tbsp of roasted sesame oil ( sorry lied before about there being on oil but a lot less than I would normally use) tsp gouchugaru red pepper powder and two tsps of roasted sesame seed. When the aubergines have cooled slice into strips stir in the sauce and let them marinate for at least 30 minutes..
sounds really nice but I'd WANT the loads of Extra virgin olive oil or lots of sesame - but that's my choice of lifestyle (low carbs therefore compensate with more fats)
Hi Jazzthecat
Great to know youre onboard & willing to try different foods
Ive never been a fan of aubergine, had it recently though and seen a slow cooker recipie floating around so may give it a whirl ❤️
Like BridgeGirl says, it would be great if you popped a photo up & you could also pop it into the recipie section under topics xxx
That sounds really good as aubergines are really filling: I'll try it tonight: thank you
