This was tonights dinner:
Sea bass fillet fried in olive oil - 160 calories plus 43 cals for olive oil
Mushrooms fried in butter and olive oil - 11 calories plus 80 calories for butter and olive oil
Cauliflower popcorn (which was A M A Z I N G ! ) - 146 calories (150g of raw cauliflower, 1.5 tblsp olive oil and some garlic pepper)
Preheat oven to 180 degrees.
Trim the head of cauliflower, discarding the core and thick stems; cut florets into pieces about the size of ping-pong balls.
In a large bowl, combine the olive oil and garlic pepper, whisk, then add the cauliflower pieces and toss thoroughly.
Line a baking sheet with parchment or foil for easy cleanup (you can skip that, if you don't have any) then spread the cauliflower pieces on the sheet and roast for 30-45 minutes, turning 3 or 4 times, until most of each piece has turned golden brown.
(The browner the cauliflower pieces turn, the more caramelisation occurs and the sweeter they'll taste).
Serve immediately and enjoy!
You can also sprinkle a little parmesan cheese on at the end of cooking time.
