I just posted in the daily diary and mentioned my meal prep. I thought I'd share!
We've got mince and pasta. Potato salad. Haddock with rice and greens. Beetroot, egg and goats cheese salad. Blueberry protein yoghurt with raspberries and strawberries. Chicken noodle soup. Cottage cheese and pineapple pots.
I roughly monitor the calories of it all so I know exactly what I'm eating when I go to the fridge, and can also check I'm eating enough as well as not too much.

Thats really helpful - thanks. My biggest downfall is when i go to work unprepared, or i take something that i really dont fancy. Thank you for sharing.

That’s an amazing idea! How long do you usually find these last you? And do you purposely make combinations that will last the same amount of time on the fridge? Just curious as to how you usually organise it really. 🙂
So the idea is that this will get me through a week - now bear in mind that this isn't the entirety of my meals.
I have a big tub of oat mix - it contains oats, vanilla protein powder and flax seed - I have this in the morning, using it to make vanilla porridge. So I don't even have to weigh out each of those ingredients first thing in the morning.
I may also cook other meals such as scrambled egg on toast, omelettes and other simple quick meals.
The prep is to take some of the cooking time out of the week and to have the more complicated meals all ready to go. Potatoes cooked, pasta cooked etc. All ready to heat and eat!
I don't specifically organise how long it lasts in the fridge - as it'll all be gone in the week! Every Sunday I'll spend a couple hours just cooking things like this up ready for the upcoming week.
I got in from a run today and was able to bang the haddock meal in the microwave. I was eating within 10 minutes of getting in - so handy when you're tired and need to refuel!
Great idea and thanks for replying. I’m on a similar journey to you, apart from I’m starting out wanting to lose 75 pounds and you are three quarters of the way there (well done!!) I’m also doing calorie counting and on week 3 of couch to 5k. Your posts are super inspiring for me so thank you very much. Can’t wait to be where you are now 🙂⭐️👍🏻💪🏼

Couch to 5k is a great idea! You'll be amazed when you look back and realise what you can do now.
I've found it really helps if you set yourself little goals along the way. 7lb, then 10lb, then a stone etc. Milestones that mean something will really motivate you when you reach them.
I can't wait to hear how you get on - get in touch if you ever have questions and want some tips from just the most average person just wading through the weight loss journey like many others!
That all looks great, I do find if I batch cook I stick to being good & eating properly & tend to lose weight, I've got Sausage & Haricot beans to do in the slow cooker & Harissa Chicken & Chick Pea casserole to do tomorrow & Thursday, it's all in the planning 👍😀x
I've inspired my dad now as well, bless him hes 83 & still likes to try new things, hes come to use his slow cooker though & has realised it's not working properly, so he said when I can go shopping again I'll buy a new 👍well he'll get a surprise as I've ordered one & it arrives today....😀💕
