Not very beautiful but tasty broccoli and cauliflower salad.

I steam the broccoli and cauliflower so it still has a bit of bite to it and let it cool. Mix half mayo and half creme fraiche, grated cheese (I use cheddar) and finely chopped spring or red onion and season. Fold in the cauliflower and broccoli.

It goes really well with grilled meat and is good if you are not eating potatoes as it’s more filling than ‘normal’ salad.

I made loads and, as it was wet and miserable today, I pinged it in the microwave and had it hot with a meatloaf recipe someone shared on here the other day.

Healthy comfort food...well done you, clever; I need to start thinking like that...I haven't bought/eaten any crisps for a few weeks now...baby steps x

Crisps were my downfall. I haven’t really missed them though. I made babybel crisps today because I fancied a bit of crunch.

Yes, chips and wine...but like you, I haven't missed them really, but then again, it's early days for me.

You cut a babybel in half widthways, place on greaseproof paper and ping in the microwave for 2-3 minutes. When they cool, they harden and make crackers that’s you can use for dips etc.

this is great. no carbs and 3 of the five vegetables and fruit quota for your day

I checked my blood sugar last night which was 17.5 ( it should be 4- 7 )

then had steamed cauliflower and coleslaw

felt sorry for myself eating this white concoction as normally my food is colourful but calorie laden

in the morning checked sugar it was 4.6 that was the lowest for a very long time I seemed to have found the key feeling good !

thank you for sharing your marvellous dish this is way better than my dinner.

No worries! I can’t remember where I saw it and it was a couple of years ago at least, but I think I was googling how to serve vegetables cold because I was bored of traditional type salads.

Interesting idea! It's basically potato salad without ... um, potato, right?

Hard to get cauliflower where I am at the moment, but I'll definitely keep this in my recipe list.

It’s how it tastes not how it looks. I bought a new electric steamer, haven’t used it yet. Have got broccoli, spring greens and mayo so may try something similar, substituting the meat for salmon as I am piscitarian.😊

Interesting recipe, I am not sure I fancy cold cauliflower and broccoli but maybe the mayo and cheese makes all the difference :) It would be a good potato alternative I think, I will definitely try it, thank you
