So I made this last night and it came out more like a vegetable rice side dish than a meal.
I'm not sure what my sister did to hers but hers came out more like a curry.
It does taste scrumptious so I might try again replacing the rice with potatoes, chickpeas, spinach and a can of tin tomatoes π , and see how it turns out.
Looking forward to 'take 2' whenever that might be.

I used the same rice. I think it's because I used more rice than the recipe called for and forgot to compensate with more water. My sister also added a tin of tomatoes to hers. But with all that considered, hers still came out much more like a curry than a rice dish - so I'm going to use the base flavors, take out the rice and replace it with ingredients that will make it more like a vegetable curry so it feels like more of a meal than a side.
Your Jambalaya looks really scrumptious, and I am hoping to make it sometime - haven't got round to it yet, but it's great to see how well yours turned out. Glad you enjoyed it.
