Well definitely changing diet slowly but surely into healthier eating habits that are going to be permanent changes. Finally finding vegetables that I like. Love roasting Mediterranean style veggies with courgettes being a favourite. Today found out I like kale too. Here’s to next vegetable discovery.

The aim of the weigh ins is to support each other, not simply to post our own weights as that would just produce a long list which would be neither interesting nor helpful. Good for you. I had a tip from someone on here to try poached eggs on grilled slices of courgette instead of toast. It is heavenly!

Hi Aussieblues I'm pescatarian but mostly veggie. I'm sure with experimenting you will find lots of veggies that you like. All kinds of vegetables can be roasted. The only veggie I'm not keen on is carrots but I can even eat them roasted. Good luck in your search.

Try roasting courgette, tomato, mushrooms, onion, pepper and even sweet potato in one tin with a little oil and some Cajun spice mix (or whichever spice mix floats your boat), served with a portion of rice
