Well definitely changing diet slowly but surely into healthier eating habits that are going to be permanent changes. Finally finding vegetables that I like. Love roasting Mediterranean style veggies with courgettes being a favourite. Today found out I like kale too. Here’s to next vegetable discovery.

Hello Aussieblues , I do hope you are enjoying the forum and will start to be more engaged. You've posted a few times but then not responded to people who have taken the time to reply to you.

Also, I just want to explain about the weigh ins. I see you've joined the Thursday team. The aim of the weigh ins is to support each other, not simply to post our own weights as that would just produce a long list which would be neither interesting nor helpful. I hope you see good results at your next weigh in and that you will take the opportunity to support your team mates.

Good for you. I had a tip from someone on here to try poached eggs on grilled slices of courgette instead of toast. It is heavenly!

Hi Aussieblues I'm pescatarian but mostly veggie. I'm sure with experimenting you will find lots of veggies that you like. All kinds of vegetables can be roasted. The only veggie I'm not keen on is carrots but I can even eat them roasted. Good luck in your search.

Well have to admit I’m a meat lover but it’s supposed to be beneficial to have a couple of meat free days and going to try to make sure minimum of one other day for fish.

Try roasting courgette, tomato, mushrooms, onion, pepper and even sweet potato in one tin with a little oil and some Cajun spice mix (or whichever spice mix floats your boat), served with a portion of rice

I have just subscribed to a veg-box and this has led me to try different new recipes with vegetables I don't normally cook. A lot of the companies have special offers at the moment. I tried Odd box which sells food that does not meet supermarkets' excessive aesthetic standards or is surplus and it is cheaper than some of the other companies.
