I must say, was very tasty indeed I've been out for a short walk, but there is a panic type of buzz building up, on the roads, transport and in the shops. Luckily I live near some woods and common land.
Which reminds me, a lot of people have been asking what others are doing over Christmas. One thing I always do on Christmas day and Boxing day, is go for a nice solitary walk to unwind and blow the cobwebs away.
That would be lovely, if you removed the Pilchards !!
My lunch was an avocado spread on a slice of wholemeal toast, with some tikka chicken pieces (and 4 rees's peanut butter cups - yes I still have some left from my birthday ! )

Very colourful full of goodness and I am sure it is very tasty too. Never had pilchards on a salad before. I have these with chopped tomato peppers onion mushrooms and sweetcorn all seasoned in one pot and left to simmer with a little chilli. I like one pot meals quick and easy.

My lunch was courgettes nicoise (according to the canteen). It was supposed to be a side dish but I don't eat the other things they cooked. Made a change.
It's always difficult getting a decent canteen meal. I think you made a good choice

LOL, it took less that 3 minutes to put together. I'm still learning a lot, particularly about canned fish, it's a lot more versatile than I realised.

I'm liking the addition of the Jalapeños. Strong flavoured pickles always help to make a salad super tasty
I love really strong flavours and often use jalapenos, pickles, capers, olives, anchovy's. Although sometimes I go for the sweet stuff, like apples, pineapple, grapes etc.
The trick is to get the strong flavours I hanker for, without going for the processed foods
ps Sometimes I add dried herbs too, such as fennels seeds on tomatoes etc
I add sundried tomatoes and dates, but chop them into small bits first. I like chopping gerkins small and stirring them into potato salad, also grating a boiled egg on top, adding halved grapes, apple slices, walnuts broken into pieces. Haven't tried anchovies for ages - need to get some soon I think! All this sort of stuff makes a salad tasty without adding the calories you'd be dealing with if you poured a sweet salad dressing all over it, with the added benefit of containing actual nutritional goodness too
