Picked up a bag of overripe tomatoes for 20p yesterday, just made wonderful tomato and basil soup ( 2 big portions at just under 70kcals a portion)
Recipe. Tomato and basil soup.
In a pan bung 1 sliced red onion, 200g deseeded weight of tomatoes ( leave skin on), 200g passatta, 300ml water, 1/2 veg stock cube and 1/2 tsp dried basil. Bring to a bubble, then simmer for 20 minutes. Cool for 5 minutes, then blitz until smooth.
This is a very rich and filling soup. I have also used it as a sauce in the past for pasta and topped with light mozzarella and fresh basil leaves.
