Hello everyone, hope you have a peaceful Sunday so far! πŸ€—

Today I’d like to share with you my simple traditional soup with the appreciation of Mother Nature that provides us a world full of abundance doing wonders for our mind and body. πŸ˜‹πŸ™β€οΈ

I love Lotus root which is one of our common cuisines in Asia. It is known for one of the most powerful plant that improves our immune system because of the 72 percent of vitamin C. On top of that, it also improves our blood circulation and regulates blood pressure because of the combination of copper, potassium and iron. In addition, there is a large amount of dietary fiber while low in calories that helps to improve the digestive system.

I love Seaweed for iodine, iron, calcium and Wood ear mushrooms for B vitamins folate, niacin (B3), and riboflavin (B2), combine with sliced ginger, vegetable broth base enhance the flavor of this soup so much. πŸ˜‹πŸ‘

Vegan meals are always full of nutrients and vitamins from this Earth that put less stress on our body that has to keep on filtering nonstop toxins. πŸ˜πŸ‘

That really does look amazing. I don’t think I’ve ever had lotus root, so thank you for the link. I often use seaweed in cooking though as I love the flavours and as you say it’s full of essential minerals. 😊

Lotus root is similar to potato but much less starchy and high in fiber. It’s very popular in Los Angeles and they do have in tin also.

What is your favorite dish you make from seaweed? πŸ˜‹

I need to get some miso paste to make seaweed salad.

My favourite dish made from seaweed is probably a β€˜fish’ made from tofu, the plain tofu is more like a white fish I guess, like cod maybe, and smoked tofu is more like I think smoked mackerel (I think? Having never eaten that)

Very interesting using tofu as vegan β€œfish” πŸ€”, I definitely will look into this. I had fermented tofu before and it is delicious. They also make wood ear mushroom firm tofu and it’s delicious. I was pescatarian before adapting to vegan diet so I did try smoked mackerel and I can imagine what you said. πŸ˜πŸ‘

This is one of my favourite seaweed dishes, tofu fried in nori sheets, it’s very simple but tastes good. Now I’m really intrigued about lotus root and will have to look out for some, probably it would be canned. I love to try new things 😊

My mom usually makes veggie egg rolls just like yours. πŸ˜‹ I sure will give it a try to make nori wrapped tofu, thank you for introducing new recipe to me. Excellent dish with an abundance of nutrients😊. Its perfect for detoxing and preventing diseases. I love giving my body dishes like these too. I haven't had seaweed much before but I'd like to add some to my daily diet now for sure. Thanks for sharing and have a good evening πŸ€—πŸ™

I’m sure you mom cooks this from time to time, esp with peanuts during new year as a simple of prosperity also. It is crunchy when you stir fry it. πŸ˜‹πŸ‘

You are absolutely right, I wanted to cook this with lotus seeds but I didn’t have at the moment until I go to Asian market.

We make vinegar lotus stems salad sooo delicious also. So many things we can make out of lotus πŸ˜‹

I keep the dried wood ear mushrooms in my kitchen cabinet all the time as I make many salad with them.
