For today meal, I made simple Chinese chives and tofu soup in mushroom broth, sided with mixed veggies pancake. ๐
Recipe Pancake:
1. Blend: 1 cup of flour (I used quinoa), 1 cup of homemade cashew milk and 1/2 tbsp of baking powder.
2. Sautรฉ mixed veggies include: chives, thin sliced bell peppers, and mushrooms, herbs seasoning and a bit of celery salt.
Just add the pancake liquid into sautรฉed veggies in sprayed avocado oil hot pan, flip and you can enjoy delicious pancake. ๐๐
