Which are the essential vitamins/minerals and should I keep taking them or have breaks?
Can taking them interfere with T4/T3/TSH blood tests?

Reading previous posts you have had T3 prescription stopped and levothyroxine dose reduced
Suggest you get vitamin levels checked, likely to have dropped substantially with reduced dose
Email Thyroid U.K. for list of thyroid specialist endocrinologists and doctors who will prescribe T3

Not sure if there are any in N Ireland
But are some who will do consultation on zoom

The essential vitamin supplements are the ones you need, and you will need to test first to know that.
We advise testing key nutrients
Vit D
B12
Folate
Ferritin
and if Ferritin is low then a full iron panel to include:
Serum iron
Saturation percentage
Total Iron Binding Capacity
Ferritin
The only supplement to interfere with thyroid blood test is biotin or any supplement containing biotin, eg B Complex or a hair/nail supplement, this is because when the testing procedure uses biotin it gives false results (most labs do use biotin in the testing procedure).
It would be wise for you to test your key nutrients before considering any supplements, if you took some that you didn't need you risk toxicity of that particular one or you just make expensive urine if it's water soluble and excreted.
We have recommended private labs where you can get them done if your GP wont do them.
