Thats exactly right Emjay I do just the same. When I worked in catering we used to keep eggs in the fridge. Get them out before using. To test if they are still fresh Pop egg into a pan of boiling water, if it floats to the top its no good.
Pete you can buy stainless steel rings , bit like biscuit cutters to pop in the pan of water and drop egg into that keeps it from spreading. thats if your fussy.
