I make spelt sourdough as I cannot tolerate any other kind of bread made with yeast or other wheat flour, spelt is an ancient grain and if it's used for making sourdough bread it's tolerated more easily for those with IBS which is what I have.
Here's my alternative bread which I've yet to try. It's Gluten-Free Vegan Oat Bread.
Just tried the bread and it's really good so here's the link to the recipe.
Even with limited movement, which I feel for you, the recipe is literally just put the dry ingredients in a bowl then stir, add the wet ingredients stir again and that's it, it's a very runny mixture.
It's really good alive just tried some so I've now added the link to the recipe to my post.

Thank you for this Martin. Unfortunately I can't have honey because of the fructose and also I'm a Vegan. I do love cinnamon though and use it a lot. I have been thinking about drinking lemon in the morning as I know it's good for you, better than plain water.
